Summer Snack Idea

School is officially out!  Summer is in full swing and we try to make the most of the warm weather in our family!  I find that being always out, packing picnics and lunches, can often lead to lots of not so healthy, quick convenience foods!  Anyone with me here?  However, I have found an amazing peanut butter ball recipe that is just like a granola bar, but a whole lot healthier!  It is super easy and quick to put together, and super easy to double the batch to always have some on hand!  They are so great to throw into little bags and take to the spray park, on a picnic, or for a healthy snack on the go!  Here is this amazing little recipe:

1 cup quick cooking oats

½ cup ground flax seed

½ cup peanut butter

1/3 cup honey

1 teaspoon vanilla

2 teaspoons cinnamon

½ teaspoon nutmeg

½ cup shredded coconut

Add all the ingredients in to a bowl (all of them! Easy, right?) and mix well.  Refrigerate for about 15 minutes.  Roll into balls and enjoy.  (You can also add chocolate chips if you like, a touch of yum!) – Credit to mrsjanuary.com for this recipe.  Another thing we like to bring along is homemade trail mix!  Making your own is often more healthy, as you know exactly what goes in your mix!  We like nuts, dried fruit, seeds, a little sweet (hello chocolate chips again!) and a grain (like cheerios or pretzels).  The combos are endless, but summer is not!  Here’s to healthy snacking this summer!
